BANANA CAKE

Lately I've been on the healthy eating band wagon again and honestly, I can't say that I mind! I'm feeling a lot more energised and overall just good about what I put into my body. It's rewarding to come back from a long day at work or college and actually eat something healthy rather than a quick frozen pizza. So, in light of that I also decided to develop my cooking skills and try out some new recipes. First up: banana cake. A very easy to make, healthy kind that is. So, if you want to know how to make this delicious treat, then just keep on reading!

INGREDIENTS:

3 BANANAS | 3 EGGS | 100 GR ALMOND FLOUR | 50 GR OATS | 2 TSPNS BAKING POWDER | TWO HAND FULLS OF WALNUTS | A HINT OF SALT | 2-3 TBSPS HONEY | COCONUT OIL (TO GREASE THE CAKE TIN)



First off, preheat your oven to 170C. Then, grab your blender and add in the eggs and bananas. Blend until it forms a smooth mixture.


Now add the dry ingredients, so the almond flour, oats, baking powder and salt. Blend until everything is mixed together.


Poor the mixture into a bowl and add the walnuts by crumbling them on top. Then stir them through the mixture with a wooden spoon.


Take your cake tin and grease it with some coconut oil. Once that's done, you add the banana cake batter and leave it in the oven for approx. 45-50 minutes.


When the time is up, switch off your oven and reveal your delicious banana cake! Don't forget to check if it's ready with the tip of a knife. Insert it into the cake and if it comes out clean, your bread is ready. Leave it to cool for about 5-10 minutes before taking it out of the tin.

That's it! All there is left to do now is slice up the bread, grab a cup of tea and enjoy. The great thing about making this is that you can store it for about a week (in a closed container), so you can make it during the weekend and have a piece every day the week after. Not bad, right?
