This, is something I can proudly say is something I learned how to make at school (in first year may I add). It's a very easy recipe to make your own pesto, used in a delicious pasta dish, sounds good right?
Ingredients (for 4)
400 g whole wheat pasta// 1 1/2 vegetable stock cubes// 1 tbsp feta cheese// 1 bunch of fresh basil// 1 clove of garlic// 1 tbsp parmesan cheese// 1 tbsp pine nuts// 2 tbsps olive oil
First, combine the basil, garlic (crush it first), parmesan cheese, pine nuts, 1/2 cube of vegetable stock and olive oil in a bowl and mesh it together with a mortar or a spoon could work too. That's it for the pesto.
Then, cook the pasta following the instructions on the packaging and add in the vegetable stock cube. Drain the pasta and catch the cooking liquid in a bowl. Now add the feta cheese to the pasta and mix it in, so that it melts into the pasta.
Finally just add the pesto and add some cooking liquid if you want to make it more creamy. And that's it!
It can also be eaten cold, so definitely a good one if you like to cook lunch/ dinner for two days.
